Our products are prepared, baked and finished on-site for customers purchasing directly from our Richmond shop.This is a hands-on, shop-based, full-time position suited to a reliable and creative pastry professional with relevant qualifications and experience in specialist cake and pastry production.The successful applicant will be responsible for preparing and baking products from raw ingredients, preparing fillings and flavours, assembling and decorating customised cakes and pastry products, and maintaining consistent standards of quality, presentation, hygiene and food safety. <h3>Benefits</h3><ul><li>Supportive and friendly work environment</li><li>Long-term career stability</li><li>Competitive salary plus superannuation</li><li>Opportunity to work with a growing cake and pastry business</li><li>Opportunity to contribute to new cake designs, flavours and pastry products</li></ul> <h3>Task & responsibilities</h3><ul><li>Prepare and bake a variety of cakes, pastries, cupcakes, cookies and other pastry products.</li><li>Weigh, measure and mix ingredients according to recipes and production requirements.</li><li>Prepare doughs, batters, creams, custards, ganache, fillings, icings and other pastry components.</li><li>Knead, roll, cut, shape and mould pastry and dough products.</li><li>Decorate cakes and pastries using cream, icing, chocolate, fondant, fruit and other decorative ingredients.</li><li>Prepare customised cakes according to customer orders and design requirements.</li><li>Monitor oven temperatures, baking times and product appearance to ensure consistent results.</li><li>Check the quality and freshness of ingredients before use.</li><li>Plan daily production according to confirmed customer orders and anticipated daily shop demand.</li><li>Ensure consistency in the taste, texture, size, appearance and presentation of finished products.</li><li>Assist in developing new cake flavours, pastry products and seasonal menu items.</li><li>Store ingredients and finished products appropriately to maintain freshness and minimise wastage.</li><li>Monitor stock levels and advise management when ingredients and supplies need to be ordered.</li><li>Maintain ovens, mixers, baking equipment and preparation areas in a clean and safe condition.</li><li>Ensure compliance with food safety, hygiene and workplace health and safety requirements.</li><li>Assist in guiding junior staff where required.</li></ul> <h3>Qualification & experience</h3><ul><li>AQF Certificate III or Certificate IV in Patisserie, Baking or a closely related qualification.</li><li>At least one year of relevant experience as a Pastrycook or in a similar cake and pastry production role.</li><li>Alternatively, at least three years of relevant work experience may be considered in place of a formal qualification.</li><li>Demonstrated experience in preparing and baking cakes and pastry products from raw ingredients.</li><li>Experience in customised cake preparation, decorating, icing, fondant work and pastry production.</li><li>Strong knowledge of baking techniques, ingredient measurement, food safety and hygiene requirements.</li><li>Good attention to detail, creativity and presentation skills.</li><li>Ability to manage multiple customer orders and work efficiently in a retail cake and pastry shop.</li><li>Good organisational and time-management skills.</li><li>Ability to work independently and as part of a team.</li><li>Flexibility to work early mornings, weekends and public holidays when required.</li></ul>
