About the role
We're looking for a skilled professional with a deep passion for fine patisserie, chocolate, macarons, and laminated doughs. You'll be responsible for preparing high-quality entremets (cakes), macarons, cremeux, mousses, chocolate decoration work, doughs, shaping and laminating, and contributing to the daily output that fuels one of the most respected French pastry teams in the country.
You'll be working with the finest ingredients; attention to detail and consistency are key. This is a role for someone who genuinely enjoys being a Pastry Cook and has serious experience to back up their knowledge — and contribute to the business' reputation.
Responsibilities
Forming and baking pastry products such as croissants, tart bases, and biscuits
Monitoring oven temperatures and product appearance
Mixing and preparing cake bases, pouring into moulds and baking
Filling and decorating flans, decorating cakes
Making chocolate truffles and chocolate decorations
Making macarons, baking and filling them
Complying with Health and Safety guildelines
Ensuring quality and quantity of raw ingredients before commencing preparation
Correctly use all relevant kitchen equipemnt e.g. knives, blenders, dough hooks, pastry cutters, mixers
Ensure ovens are correctly heated to relevant temperature and monitor products during baking
Prepare a design a range of desserts
Prepare additional quantities of dough and dessert mixes at end of shift to store for use next morning
Ensure all baking tins and trays are emptied, cleaned and stored appropriately
Ensure kitchen and kitchen equipment is kept clean and tidy at all times and adhere to OH&S regulations
About you
Certificate III in Patisserie (or overseas equivalent) or at least 3 years relevant work experience
Minimum 2 - 3 years of hands-on experience in a fine Patisserie
Experience tradition European & Artisan style baking and cakes highly preferred
Willingness to excel in your profession
High level of autonomy, reliability, cleanliness, and integrity
Physically fit and comfortable with the demands of large-batch production
Ability to work independently and as part of a collaborative team
Stable and mature mindset — ideal for candidates looking for a long-term workplace.
