Beachside Cafe Head Chef

We are searching for a Chef to manage the day to day function of the café by leading from within – motivating, managing and empowering team members and hosting our customers' experience in Estabar’s signature style.

Key Accountabilities

• Creating, costing, implementing and ensuring the delivery of, a consistent and high-quality menu. 
• Conduct regular menu reviews
• Ensuring the kitchen is always presented to the highest standard, and food and safety regulations are maintained.
• Hands-on daily supervision of kitchen team to ensure the preparation of high quality dishes.
• Mentor and train other kitchen staff to improve their cooking and food preparation skills, work ethic and passion in a hygienic environment.
• Recruitment of all kitchen staff.
• Preparation and cooking menu items, ensuring excellent quality throughout the process
• Maximising profitability and minimising food waste by freezing and preserving food when appropriate 
• ordering food and supplies and supplier negotiations.
• Communication with all levels of staff and management.
• Implementing and adhering to all internal policies and procedures in a structured environment.

Skills and experience

• Understanding of current legislation, food safety, HACCP and OHS standards.
• Demonstrated communication and team leadership skills.
• Experience in a high-volume busy casual dining venue 
• Ability to work in a busy environment while keeping calm under pressure and resolving problems
• Creativity to stay at the forefront of trends and innovation without forgetting the bottom line
• An eye for detail
• Experience in using kitchen management systems.
• Above all else have a passion for great food and great customer service.

Qualification & experience

Trade qualification in commercial cookery.
