Summary

The Grand Castle Restaurant and Banquet Hall is a well-established Indian restaurant and banquet venue located in Wembley, Perth. The restaurant is known for delivering authentic Indian cuisine prepared using traditional recipes and cooking techniques, along with catering services for weddings, corporate functions, and private events.

We are currently seeking a skilled and passionate Chef to join our kitchen team and contribute to maintaining high standards of food quality and kitchen operations. In addition, we are also seeking an experienced and dedicated Restaurant Manager to oversee daily operations and ensure the delivery of high-quality service across the restaurant. 

Key Responsibilities (Chef)

  • Planning menus and estimating food and labour costs in consultation with management
  • Preparing and cooking a wide range of authentic Indian dishes in accordance with menu requirements
  • Monitoring the quality of dishes at all stages of preparation and presentation to ensure consistency
  • Supervising and coordinating kitchen staff during food preparation and service periods
  • Training and guiding junior kitchen staff on cooking techniques and food preparation procedures
  • Ordering food supplies and ensuring proper storage and stock rotation of ingredients
  • Ensuring all kitchen operations comply with food safety, hygiene and workplace health and safety standards

Skills and Experience (Chef)

  • Minimum Certificate IV and Diploma of Hospitality Management or other equivalent successor qualification 
  • Minimum 1-2 years of experience working as a Chef in a commercial kitchen
  • Strong knowledge of Indian cuisine, spices and traditional cooking techniques, including tandoor cooking
  • Ability to manage kitchen operations in a fast-paced environment
  • Strong teamwork, communication and organisational skills
  • Sound knowledge of food safety and hygiene standards

 

Key Responsibilities (Restaurant Manager)

  • Plan, organise and oversee daily restaurant and banquet operations
  • Manage staff recruitment, training, rostering and performance
  • Ensure a high standard of customer service and handle customer feedback or complaints professionally
  • Monitor financial performance, including budgeting, cost control and revenue targets
  • Maintain stock levels, coordinate purchasing and manage supplier relationships
  • Ensure compliance with licensing, food safety, hygiene and workplace health and safety regulations
  • Coordinate with kitchen staff to ensure smooth and efficient service delivery
  • Oversee bookings, functions and event operations to ensure successful execution

Skills and Experience (Restaurant Manager)

  • Minimum Certificate IV and Diploma of Hospitality Management or other equivalent successor qualification
  • Minimum 3 years of experience working as a Restaurant Manager or in a similar hospitality management role
  • Strong knowledge of restaurant operations, customer service standards and hospitality industry practices
  • Ability to manage daily operations in a fast-paced restaurant and banquet environment
  • Strong leadership, communication and organisational skills
  • Sound knowledge of food safety, licensing and workplace health and safety regulations
